Full-time 30-50 hrs/week, including Saturday, Sunday, holidays and festivals. Experience required. 

PURPOSE OF JOB: Responsible for all food prepared in the kitchen to ensure proper portioning and consistent excellent quality.  Monitor and adhere to Serve Safe, Food Code/HACCP and Ox Yoke standards and regulations.

PRIMARY DUTIES:

  1. Prepare and/or monitor food prepared and served relative to food safety, quality, adherence to recipes, portion control, proper plating, garnishing, appearance, and proper degree of doneness and temperature.
  2. Prepare breading, sauces, and garnishes.
  3. Food Temperature Log - takes and/or monitors the completion of the daily log.
  4. Supervise kitchen-staffing level and adjust accordingly.
  5. Monitor inventory levels of goods in the kitchen and restocks as needed.
  6. Supervise kitchen and food preparation staff to ensure satisfactory completion of assigned duties.
  7. Supervise and assist with proper portion and waste control.
  8. Supervise and assist with cleaning and sanitation of all back of the house areas.
  9. Supervise and assist with equipment, cleaning, and maintenance.
  10. Assist with planning menus, specials, food production, and research and development of new menu offerings.
  11. Assist with training staff in safe operating procedures for all equipment, utensils, and machinery.
